Apple Potato Pancakes

Ingredient List
300 ml apples, unpeeled & finely chopped 1 1/4 cup
250 ml potatoes, peeled & grated 1 cup
125 ml apple sauce 1/2 cup
125 ml all purpose flour 1/2 cup
2 egg whites 2
5 ml salt 1 tsp
In a medium bowl; combine apples, potatoes, apple sauce, flour, egg whites and salt.

In a nonstick frying pan; heat over medium heat until hot. Drop rounded tablespoonfuls of batter into skillet. Cook 2 to 3 minutes on each side or until lightly browned. Place pancakes on nonstick cookie sheet. Bake in preheated 475 F (240 C)oven for 10 to 15 minutes or until crisp. Serves with additional apple sauce or apple slices if desired.
