Apple Potato Pancakes
|300 ml||apples, unpeeled & finely chopped||1 1/4 cup|
|250 ml||potatoes, peeled & grated||1 cup|
|125 ml||apple sauce||1/2 cup|
|125 ml||all purpose flour||1/2 cup|
|5 ml||salt||1 tsp|
|In a medium bowl; combine apples, potatoes, apple sauce, flour, egg whites and salt.
In a nonstick frying pan; heat over medium heat until hot. Drop rounded tablespoonfuls of batter into skillet. Cook 2 to 3 minutes on each side or until lightly browned. Place pancakes on nonstick cookie sheet. Bake in preheated 475 F (240 C)oven for 10 to 15 minutes or until crisp. Serves with additional apple sauce or apple slices if desired.
