Baked Spinach Casserole
Metric Ingredient Imperial
455 g fresh spinach 1 lb
50 ml olive oil 1/4 cup
- pinch crushed red pepper flakes -
50 ml fine dry bread crumbs 1/4 cup
1 large garlic clove, minced -

In a large bowl; toss spinach with 3 tablespoons (40 ml) oil until leaves are lightly coated.  Toss again with salt, pepper and red pepper flakes. 

In a small bowl; mix bread crumbs with garlic and remaining oil.  Season with salt and pepper to taste.

In a 2 1/2 quart (2.5 l) casserole; pack spinach (it will shrink while baking).  Sprinkle prepared bread crumbs over top.  Bake in preheated 400 F (200 C) oven for 30 minutes.
