Walnut Chicken
Metric Ingredient Imperial
5 ml vegetable oil 1 tsp
350 g chicken breasts, skinless, boneless & cut into chunks 3/4 lb
1 medium onion, chopped 1
2 medium carrots, peeled & chopped 2
30 ml walnuts, chopped 2 tbsp
2 ml caraway seeds 1/2 tsp
375 ml bulgur 1 1/2 cup
500 ml chicken broth 2 cup
30 ml golden raisins 2 tbsp
.5 ml cinnamon 1/8 tsp

In a large nonstick skillet; heat oil.  Add chicken, onions, carrots, walnuts and caraway seeds.  Saute for 4 to 5 minutes or until onions are golden brown.  Add bulgur and saute for 1 to 2 minutes.

Add broth, raisins and cinnamon.  Bring to boil.  Reduce heat to low, simmer for 15 minutes, covered. or until chicken is cooked through and bulgur is tender. 

Serves 4
